Healthy Recipe: Summer Watermelon Salad


It's hot outside. Your taste buds are telling you to eat the ice cream, but your heart is craving a healthier alternative. Here's a great one!

1.5 lbs watermelon, diced

2 sprigs mint, chopped

1/8 cup crumbled feta cheese

1 Tbsp. red wine vinegar

1 Tbsp. olive oil

Place diced watermelon in a bowl with chopped mint. Sprinkle feta over the mixture. In a small bowl, mix together red wine vinegar, a dash of salt and pepper and whisk in olive oil. Pour over salad and enjoy!
